These are some of my favourite Instant pot chicken recipes. From Mushroom Chicken Stew to Spicy Bacon Chicken, Beans and Chicken to Chinese Duck Stew each of them is delicious and easy to make in your Instant Pot. If you are a working person and don’t have enough time to spend in the kitchen then these recipes are a perfect option to make during weeknights and serve it in the following day after preserving it in the freezer.

Spicy Bacon Chicken

Prep time: 5 minutes
Cooking time: 25 minutes

Ingredients:

  • Two chicken breasts
  • One cup chicken broth
  • Two tablespoons chilli powder
  • Two jalapeno peppers, chopped
  • 4 slices bacon, fried crispy
  • One cup sour cream

Directions:

  • Pour the chicken broth into the instant pot. Add the jalapeno peppers and chilli powder and stir.
  • Place the chicken breasts in the instant pot.
  • Cook on the slow cooker setting for 6-8 hours.
  • Finally, stir in the sour cream and top with the fried chicken for a chicken and sauce meal.

Beans and Chicken Slow Cooked

Cooking time: 6-8 hours

Ingredients:

  • ½ cup black beans, soaked overnight and rinsed
  • One cup butternut squash, cubed
  • Two chicken breasts, cut into pieces
  • Three cups chicken broth
  • Two cups chopped tomatoes
  • One cup green bell pepper, chopped
  • One yellow onion, diced
  • 3 cloves garlic, diced
  • One tablespoon chilli powder
  • One teaspoon black pepper

Directions:

  • Place all of the ingredients in the instant pot.
  • Cook on the slow cook setting for 6-8 hours.

Ingredients:

  • Two cups corn
  • One cup shredded kale
  • Two chicken breasts, cut into pieces
  • Three cups chicken broth
  • One cup chopped red peppers
  • One yellow onion, diced
  • 3 cloves garlic, diced
  • One tablespoon garlic powder
  • One teaspoon black pepper

Directions:

  • Place all of the ingredients in the instant pot.
  • Cook on the slow cook setting for 6-8 hours.
  • Serve with good bread and salad

  • One cup sour cream
  • Two cups chicken broth

  • One garlic clove, chopped
  • Two large potatoes, diced
  • One yellow onion, chopped

Directions:

  • Place all of the ingredients in the instant pot.
  • Cook on the slow cook setting for 6-8 hours.
  • Serve with good bread and salad

  • ½ cup coconut milk
  • One tablespoon lemongrass powder
  • One teaspoon garlic powder
  • One cup green beans
  • ½ cup red pepper, chopped
  • ¼ cup cashew nuts
  • One tablespoon chilli powder

Directions:

  • Place all of the ingredients in the instant pot.
  • Cook on the slow cook setting for 6-8 hours.
  • Serve with rice.

Indian Curry Chicken

Ingredients:

  • Two chicken breasts, cut into pieces
  • Two cups chicken broth
  • ½ cup of coconut milk
  • Two tablespoons cornstarch
  • One tablespoon curcumin powder
  • One tablespoon fenugreek powder
  • One tablespoon garlic powder
  • One teaspoon chilli powder
  • Two potatoes, cubed
  • Two tomatoes, chopped
  • One carrot, chopped
  • One cup spinach

Directions:

  • Place all of the ingredients in the instant pot.
  • Cook on the slow cook setting for 6-8 hours.
  • Serve with rice.
