4 ingredients and 5 minutes, this is what all you need to make these delicious chocolate peanut butter no-bake keto cookies. It is a paleo & vegan friendly, low carb & sugar-free cookies with just 2 gm net carbs each.

I always feel that a cookie is incomplete until it is not mixed with a heavy dose of chocolate. These peanut butter chocolate cookies make a perfect treat for your guest for this thanksgiving and Christmas. I am sure they will love these cookies.

Most importantly these cookies are easy to make and healthy and they do not require baking. It is something you can easily whip under 10 minutes.

I am sure no one will turn down these cookies because it has peanut butter, chocolate and it is incredibly healthy. What else you need in a cookie!

These chocolate peanut butter no-bake cookies are soft, fudgy, and filled with the choice of your chocolate at the center. These cookies are completely sugar-free, keto-friendly, paleo, low carb & vegan.

How To Make This 4 Ingredients No-Bake Peanut Butter Chocolate Cookies:

INGREDIENTS

  • Peanut Butter: This is my favorite peanut butter. You can buy it here.
  • Coconut flour: Now, don’t get worried about coconut flavor, you will never taste coconut at all. It helps to hold the peanut butter filling together.
  • Sugar-free syrup: I used maple syrup which is keto-friendly.
  • Sugar-free chocolate chips: To spread the top of the cookies. 

INSTRUCTIONS

  • Take a large mixing bowl add peanut butter, sugar-free syrup & coconut flour, mix well until thick dough remains. If the mixture is very thick or crumbly add 2 tbsps of water or coconut/almond milk.
  • Use your hands and form small balls of dough and place them on a lined plate. Press balls to create a cookie share and put them into a freezer.
  • In the meantime, melt the chocolate chips in the microwave. Alternatively, you can also use a saucepan and melt the chocolate chip on the stovetop.
  • Remove the cookies from the freezer. Use forks and dip the cookies into the melted chocolate chips until it is fully covered. Do this for all the cookies. Once done place them inside the fridge and wait until it gets firm ( approx. 20 minutes ).

How to Choose A Perfect Keto-Friendly Peanut Butter?

Always look for the ingredients while buying peanut butter from the supermarkets. Keto-friendly peanut butter should contain a maximum of 2 ingredients peanuts & salt. Also, make sure to check the nutritional label to confirm it does not contain any sugar nor any preservatives or fructose corn syrup.

It is also important that your peanut butter is smooth, creamy, and drippy. The crunchy peanut butter does not mix well with the other ingredients.

How To Make Your Own Chocolate:

It is a good idea to make your own chocolate when you are on a keto diet. The process is very simple, just combine coconut oil, cocoa powder with a liquid sweetener like stevia or maple drop. When you have decided to make your own chocolate then you should remember that the no-bake cookies will not be stable at room temperature.

Alternatively, you can also buy chocolate from well-known brands on Amazon like Lily’s chocolate and this semi-sweet chocolate chips. Both are healthy and keto-friendly.

How to Make A Perfect Paleo Vegan Chocolate Peanut Butter No-Bake Cookies?

  • First, freeze the peanut butter filling before coating them with chocolate
  • Allow the chocolate covered cookies to sit at room temperature for 10 minutes before placing it in a freezer for 30 minutes.
  • Remove the cookies from the freezer and thaw it before consumption
  • If you are planning to gift these cookies to your loved ones for Thanksgiving or Christmas, then keep it wrapped in parchment paper.
