Keto Bacon-wrapped chicken breast is a perfect low carb dinner dish. It is cheesy and salty and it’s every bite will surely put a smile on your face. This delicious bacon chicken needs only 5 ingredients and 5 minutes for preparation and you will have these delicious chicken bites served at your dinner table.

This is a very simple low carb, keto, gluten-free, sugar-free & grain-free recipe. It is one of those old fashioned comfort foods which goes with all kind of things. They are best when you are hosting a house party or whenever craving for cheesy salty chicken bites.

HOW TO MAKE THESE BACON WRAPPED CHICKEN BREASTS?

INGREDIENTS:

  • Chicken Breasts
  • Seasoning Rub
  • Bacon
  • Shredded Cheddar Cheese
  • Sugar-Free Barbecue Sauce (Optional)

INSTRUCTIONS:

  • Preheat the oven to 400°F. Spray a large rimmed baking sheet with cooking spray.
  • Rub both sides of the chicken breasts with the seasoning rub and top the chicken breasts with bacon. Put it on the rack and bake it for 30 minutes or until the chicken reaches 160 degrees and bacon turns crispy.
  • Remove the tray from the oven and sprinkle cheese on top of the bacon. Put it back in the oven for 10 minutes or until cheese turns bubby or golden. Serve hot with barbeque sauce. 

OTHER VARIATION TO MAKE THIS KETO BACON WRAPPED CHICKEN BREASTS

There are quite a few variations that you can try to make using the best available ingredients. Here are some of the options:

  • Chicken size: If you prefer bite-sized pieces then cut the chicken into 2-inch chunks and follow the rest of the instructions. Bake for 15 minutes. Smaller biter tends to cook faster than the large ones.
  • More spice: If you like more spice then toss up some jalapenos on top of the cheese.
  • Cayenne Pepper  If you want a touch of heat then go ahead and sprinkle some cayenne pepper with the seasoning mix.

HOW TO COOK CHICKEN PERFECTLY?

I use a meat thermometer to know whether the chicken is cooked well or not. Insert the thermometer in the thickest part of the chicken and check if the temperature reached 160°F or not for perfectly cooked chicken. Remove the chicken once it reaches the desired temperature and allow it to rest. This makes chicken nice and juicy and never dried out.

You can also check for the color of chicken to know if it is fully cooked or not. If it is white at the center it means the chicken is well cooked, if it is overly pink, bloody, or raw it means you need to cook the chicken a little bit longer.

HOW MANY DAYS CAN YOU STORE CHICKEN IN FRIDGE?

Store the chicken once it cooled completely. It can last for 4 days depends on how properly you store. Leftovers should be stored in an airtight container.

After the chicken has cooled completely, you should store it in the fridge. It will last 3-4 days in the refrigerator as long as you store it properly. Leftovers should always be in an airtight container.

HOW LONG CAN I FREEZE KETO BACON WRAPPED CHICKEN?

If you wrap each piece of keto bacon-wrapped chicken separately in a plastic wrap or tin foil and place it in a freezer-safe container then it can last for 4 months.
