Easy Creamy Shrimp Soup Recipe

The first step in making creamy shrimp soup is to prepare the spice mix. Here’s what you’ll need:

  • Salt
  • Ground black pepper
  • Garlic powder
  • Onion powder
  • Old Gulf seasoning
  • A pinch of cayenne pepper

Mix these ingredients in a small bowl and set aside.

Preparing vegetables

Asparagus

Before you start, prepare 12 asparagus spears by cutting off the bottoms, which tend to be tough. Next, cut the asparagus into 1/2-inch pieces. Add the asparagus to a pot of boiling, salted water and blanche for 5 minutes. This will help soften them while keeping them crisp. Then, transfer the asparagus to an ice bath to stop the cooking process.

Preparing shrimp

As a note, fresh shrimp is best, but frozen shrimp can be used to save time and effort. If you choose frozen shrimp, be sure to thaw it before using.

Add 1 tablespoon of the oil to a Dutch oven or skillet over medium-high heat. Next, add 1/2 cup of the celery, onion, and green pepper. Cook for about 7 minutes or until the vegetables are tender. When this step is complete, remove the vegetables from the pot.

Preparing the cream base

In the same pot, add 8 tablespoons of unsalted butter. Add 1 teaspoon of xanthan gum and whisk until combined and the butter begins to brown. Seafood, vegetable, or chicken broth can be used in the same way. Add some of the broth to the pot along with some heavy cream and whisk until combined.

Add the spice and vegetable mixture.

Add the spice mix you prepared earlier and mix again. Now, add the celery, onion, and green pepper to the pot. Also add the can (8 oz.) of chopped mushrooms and asparagus. Mix everything together well until the soup thickens well.

Add shrimp

Now turn off the heat and add the thawed shrimp. Mix the shrimp well throughout the soup.

Bread in the oven

Optional step

This step is optional, but many people like to place the pot on a baking sheet before putting it in the oven to avoid any bubbles during cooking. Cover the pot with a lid or a piece of aluminum foil and place it in the center of a preheated 350°F oven for 30 minutes.

Final touches

After cooking is complete, remove the pot from the oven and uncover. If there is any excess oil on the surface, simply stir the soup again to combine well.

Instructions

  1. Prepare the spice mix by combining salt, ground black pepper, garlic powder, onion powder, Old Bay seasoning, and a pinch of cayenne pepper in a small bowl. Set aside.
  2. Trim the bottoms off 12 asparagus spears, cut them into 1/2-inch pieces, and blanch in boiling salted water for 5 minutes. Transfer to an ice bath to stop cooking.
  3. In a Dutch oven or skillet, heat 1 tablespoon of oil over medium-high heat. Add 1/2 cup each of diced celery, onion, and green pepper, cooking for about 7 minutes until tender. Remove from the pot.
  4. In the same pot, melt 8 tablespoons of unsalted butter, then whisk in 1 teaspoon of xanthan gum until combined. Gradually add seafood, vegetable, or chicken broth along with heavy cream, whisking until smooth.
  5. Stir in the spice mix and the cooked vegetable mixture. Add 1 can (8 oz.) of chopped mushrooms and the blanched asparagus, mixing until the soup thickens.
  6. Turn off the heat and fold in thawed shrimp, ensuring they are well distributed throughout the soup.
